In Wu Yi Shan it is said that the name of this outstanding tea (White Rooster's Comb or White Cocks Comb) was given by a monk to memorialize a courageous rooster that sacrificed his life while protecting his baby from an eagle. Moved by the rooster's display of courage and love, the monk buried the rooster and from that spot, the Bai Ji Guan tea bush grew.

It is said that in China giving of a White Rooster is a rare and prestigious gift reserved for very special relationships and gifts...to me, that holds true with the tea. This is an outstanding oolong, slightly lighter than it's more oxidized cousins. The resulting lighter oxidation results in aroma profiles slightly different from the more oxidized Wu Yi's offering complex notes of honey, almond, vanilla and corn husk...
