During its month's-long processing the pile is turned to yield the most consistency possible. Moisture however settles to the bottom of the pile collecting juices from the pile and eventually hardening into flavor packed nuggets of deliciousness we call Lao Cha...Old Tea...
The firm bottom crust of the pile is broken into small pieces about 3-8g and finish dried. The result is nothing short of sensational. A must for any serious Shu Pu'er fan.
