Flattened in a hot wok as they are pressed down by hand, these tea leaves toast on the wok surface as part of the very unique local artisan processing technique of Long Jing Village...A Chestnut aroma results in the wet tealeaves, while the broth offers a pleasing bright light yellow color and a smooth, pleasing green tea flavor.

One of the Ten Famous Tea of China, from Hangzhou Zhejiang Province. Wok-firing flattens and toasts these leaves, resulting in a captivating vegetal-chestnut aroma.

In the unique case of Long Jing, the leaves are gradually flattened by hand as the leaves are skillfully stirred and tossed in the hot wok, both arresting the oxidation and "setting" the character in toasting the leaf surface. This technique produces an enchanting roasted chestnut nuance that blends with the delicate vegetal aroma of the leaf material.

The process begins with plucking of the classic two leaves and a bud, taken in the spring when the leaves are at their most abundant ingredient content.

True artisan technique developed and refined over generations of dedicated tea growers yields a most unusual and elating green tea experience.

In Long Jing village (Dragon Well village), it is said that the tea is at its very best when steeped with the mineral-rich water from the mountain-spring-fed well which gave this region its name long ago...Long Jing, or Dragon Well.

The water is so mineral-rich that the local people say when you fill your teacup with the Dragon Well Water, it will extend above the top rim of the cup.
