One of the Ten Famous Tea of China, from Hangzhou Zhejiang Province. Wok-firing flattens and toasts these leaves, resulting in a captivating vegetal-chestnut aroma.

A local artisan tea processing technique unique to Long Jing Village flattens the leaves in a hot wok as they are gradually pressed down by hand, toasting on the wok's surface.

The leaves are skillfully stirred and tossed in the hot wok, halting oxidation and "setting" the character as the leaf surface toasts. This technique produces an enchanting, roasted chestnut nuance that blends with the delicate vegetal aroma of the leaf material.

The process begins with plucking the classic two leaves and a bud, taken in the spring when the leaves are at their most abundant ingredient content.
