It is a big world of Matcha out there, and there is a lot to know. What matters first is the quality of leaf you begin with which relates to the plant, grower and location. There are many teas out there that are called Matcha and indeed are ground green tea, but the content of the Matcha is what matters related to quality and your expectations...especially where it comes from. Most expect Matcha to be from Japan but many Matchas on the market are from China and other countries with lower production cost than Japan.

Another factor is the size of the grain that the Matcha is ground to. It takes longer to grind finer grain so the Matchas that "whisk" into desirable foam best are finer grain.

To keep it simple, the quality of the material (the leaf) and the grain size are two important Matcha factors for your purveyor to consider.
