So, let's be clear on just what Masala Chai actually Is and Isn't...

In Hindi, the word Chai, which derived from the Romanized Chinese word for tea Cha, means exactly that...tea

The word Masala refers to a varying blend of spices used in Indian cooking...

The addition of Camellia sinensis to masala spices in the 1830's should be no surprise as masala spices of one type or another have been added to food items in India for thousands of years.

The discovery of indigenous people in the Assam region of north-east India using tea as a medicinal led to the creation of one of the most prolific tea producing regions of the world.

While initially too high of a luxury for native people, eventually tea made its way into all social classes. As masala (mixed-spices) spices are added to all consumed foods in India, they made their way into tea and...Masala Chai was born.

What Masala Chai is not, is Chai Tea. Confusion over the term Chai has led to an association of the word with the spicy tea drink we have come to savor. 

So, if it matters to you, the phrase Chai Tea actually means Tea Tea, when we really are intending on requesting Masala Chai...

Imagine a Masala Chai without Tea? 

Easy enough when you consider the ancient Ayurvedic practices go back thousands of years. The early precursor of Masala Chai was a tea-less version initially created for medicinal properties.

Adding tea, was a natural progression.

A Chance Encounter...

A dozen or so years ago I had the opportunity to spend some time with an Indian woman that was willing and anxious to share with me her Masala Chai technique and recipe.

I have to mention, as you can imagine, that there are as many Masala Chai recipes in India as there are spaghetti sauces in Italy...as one would guess.

Up to that time I had always imported my Masala Chais from origin, but after this chance encounter to experience Masala Chai creation, I was inspired and have blended our own Health Food In A Cup ever since.

A Classic with a Savvy, Healthy spin...

The Indian woman started by heating milk, gradually added tea and masala and simmered for a long time.

Because of the time involved, although there was an amazing result, I knew that would not work for our customers most of the time due to the time and availability of all the ingredients.

I decided to pre-blend the tea and Masala spices, and eventually landed on proportions that said, Masala Chai to me.

Let's make Tea Soup...

In China, the leaves are the tea, and what we drink is Tea Soup. In fact, early uses of the tea plant were for exactly that, making soups.

In essence with Masala Chai, we are back to that...mulling together ingredients to make a broth with the blended goodness of everything in the pot...or in the case of tea...the infuser.

We're all about the health benefits of Camellia sinensis, the tea plant, so let's start there...

My main thing is tea because of its far-reaching health and flavor benefits, so selecting healthy teas with properties that combine well with masala spices is the first step.

Thinking through options for the base teas to use, I realized there was opportunity to create some variation with my bases and offer a range of Masala Chai options.

But now to the tea, introduce Masala...

Combining the right organic teas with organic health-boasting masala spices results in a tea soup that is exciting and intriguing in a whole new way.

I will save you the time and effort of looking up the health advantages of the ingredients that we blend into our Masala Chai recipes by saying I have, and it is amazing...bountiful and healthy in almost countless ways.

In India, it seems like on every corner you will find a Chaiwala where unique Masala Chais are being prepared and served straight from a pot...now you can give it a try at home...

Making Masala Chai...

In India, they sweeten and lighten their Masala Chai, usually with buffalo milk & sugar...sometimes jaggary a sweetener from the coconut palm.  You can find your own technique that makes you happiest. Enjoying Masala Chai with nothing added is great just as is.

Staying with the healthy approach, I use Almond Milk to lighten, and Honey to sweeten...

With our pre-blended options it's a snap to prepare Masala Chai just the way you like it:

  1. Froth 3/8-1/2" of almond milk in the bottom of your cup/mug (also don't have to froth) or steam. 
  2. Steep the tea a little more on the robust side if you are planning to lighten.
  3. Remove leaves and add a touch of honey to taste.
  4. Pour the Masala Chai through the frothed almond milk...
  5. Prepare for something wonderful
