Let's Start With What Is In Your Tealeaves...And What Comes Out...

Conceptually there are two types of ingredients in your the tealeaves you steep:

Those that come into the broth...and those that don't.

I say broth because In China, considered by most the place with the richest history in tea, it is the leaves they consider the tea, and what we drink is considered the tea soup...

All at once...or a little at a time?

Think of it this way...

If you were to remove 100% of all the soluble ingredients (the ones that come out of the leaves) from the tealeaves at one time, the soup would be too concentrated and would be unpleasant.

Also the time it would take to do that would leave the non-water soluble parts of the leaf (the stemy-solid parts of the leaves) in the water too long so it would begin to impart additional undesirable character to the soup.

How to control the amount you extract from the leaves...

By removing just the amount of ingredient from the tealeaves with each subsequent infusion that provides you the best tea character in the cup you can enjoy consistent quality, cup-after-cup.

There is an easy way to extract the perfect amount of ingredient from the leaves each infusion and it will provide you outstanding cup character and will allow you to get the most for your money by getting all the goodness from your leaves.

How to tell the amount that's just right...

With each new tea you encounter take a guess at the broth color you think you should steep to and then under-steep to a slightly lighter shade or tint.

On each tea package we sell, we provide a target steeping water temperature and a target broth color.

The broth color we provide is to give you a guideline for a place to start.

The idea is to only extract a portion of the soluble ingredient that produces a broth color that you will determine is Your Sweet Spot.

For example, if your sweet-spot broth color was a result of the extraction of 25% of the leaf's soluble ingredient, you could likely re-steep the leaves to that same broth color four times...each time yielding a pleasing cup.

Decades ago on one of my first trips to the tea gardens of China, sitting in a tea market packed with tea vendors while learning about a particular oolong tea, a tea man who was preparing the tea told me through a translator that I should go from drinking tea...to tasting tea.

As we sat and sipped I began to realize how much greater the opportunity of tea was then I had known...my tea experiences since that day have never been the same.

It was then that my process for experiencing tea changed to a more comprehensive awareness and added a new dimension to my tea enjoyment.
